3. 肥瘦相间的肉,最好是五花肉,因为菜花喜油,切成大薄片。

4. 姜蒜切碎,郫县豆瓣酱剁碎。爱吃辣的可稍加一点豆瓣酱,吃不了辣的,只放少许即可。

5. 热锅凉油油温上来后下肉片炒的肉酥吐油后下郫县豆瓣辣酱炒出红油,再下姜蒜爆香,下酱油,花椒水,白糖,翻炒!(一般用豆瓣辣酱炒菜时放白糖,这才会出现鱼香的味道)

6. 下掰好的小朵菜花爆炒,注意是爆炒,一定要大火。

7. 爆炒容易糊锅,看爆炒时菜花很干了,顺锅边淋入少许热水,注意此时一直大火爆炒,菜花不易熟,炒到花软色绿,快熟时放盐。

8. 放两小勺盐,要根据菜量多少放,豆瓣酱也是咸的。

9. 看勺里的汤被菜花吃透,上色,花软,最后一定要淋入芡汁,也就是水淀粉,顺锅边淋入,让花充分裹上汤汁,色泽鲜亮,淋入香油,顺锅边淋入少许醋,翻勺出锅!
